The Story of HILLS
Every good place has a beginning. Ours started with a grill, a handful of stubbornly high standards, and the belief that a burger could be something far better than fast food.
HILLS began in Brecon in 2017, tucked within the landscape of the Bannau Brycheiniog. The idea was simple but uncompromising: cook the kind of food we’d travel for ourselves.
Proper ingredients, real cooking, and a place that felt alive with energy.
The burger became our obsession.
Beef from great butchers. Bread from brilliant bakers like Alex Gooch Bakery. Sauces made in our kitchen. Patties smashed onto a scorching grill until the edges caramelise and the smell alone stops people in their tracks.
Word travelled. Tables filled. The burgers developed a following of their own.
What started as a small independent restaurant slowly became something bigger.
HILLS Brecon
The restaurant is still the heart of it all.
This is where new ideas begin. Where specials are tested, sauces are tweaked, and dishes occasionally get a little wild before finding their way onto the menu. Some are nostalgic, some playful, some completely unexpected. But they all follow the same rule: if it isn’t genuinely delicious, it doesn’t stay.
The room itself is relaxed, warm, and buzzing most nights. It’s the sort of place where friends gather, families pile in, and strangers leave talking about what they just ate.
The HILLS Airstream
Not long after the restaurant found its rhythm, we wanted to take HILLS further afield.
Enter the HILLS Airstream.
A gleaming American trailer transformed into a compact street-food kitchen, built to bring our burgers to festivals, pop-ups, private parties and events across the country.
When the hatch lifts and the grills fire up, it’s unmistakably HILLS. The same smashed patties, the same toasted buns, the same unapologetically bold flavours — just served from polished aluminium under open skies.
It’s loud, fast, and a lot of fun.
HILLS Coffee House
In 2026, another chapter opened with the arrival of HILLS Coffee House.
Coffee has always been part of our daily ritual, and the Coffee House grew naturally from that love. Built around exceptional beans, beautiful bread, and a menu designed for mornings, lunches, and slow afternoons.
Expect outstanding coffee, sandwiches made on incredible bread, pastries worth making a detour for, and a house sweet that people come back for again and again.
It’s calmer than the burger grill, but the philosophy is exactly the same.
One Idea, Three Places
Today HILLS exists in three forms:
• HILLS Brecon — the restaurant where it all started
• The HILLS Airstream — our travelling burger kitchen
• HILLS Coffee House — our home for coffee, bread and slow mornings
Different spaces, same spirit.
We cook food we care about.
We work with producers we respect.
And we build places where people genuinely want to spend time.
HILLS is proudly independent, family-run, and rooted in Brecon.
The grills are still hot. The ideas keep coming.
